Three families of products deeply rooted in Tuscan rural tradition, used in cooking and beyond. These specialities are part of an ancient gastronomic history in which the less prized cuts of pork were crafted with such care and precision that they often surpassed the finest cuts in flavour. This mastery has been passed down from our fathers, who in turn learned it from skilled norcini (master butchers).
